INTRODUCTION

La Unión de Jabugo is a Spanish family business which has dedicated to the production of high quality Iberian hams, shoulders and cold meats with an exquisite flavour since 1890.

We control all the production process from the pig breeding and slaughtering to the production of hams, shoulders and cold meats.

We have two production facilities. On the one hand, we have the slaughterhouse and the cutting room located in Écija, Sevilla, and on the other, the curing room and the warehouse in Jabugo, Huelva. Both plants have obtained the mandatory permits and standardizations from the Community Health Authorities, which allow us to export our products to any EU country and to many countries outsite the EU.

TRADITION

The ancient tradition in the curing of hams of Jabugo dates back to the times of the Roman Empire, whose salting process was very appreciated. Legend has it that Cristopher Columbus carried some hams from Jabugo in his trips to the New World.




MICROCLIMATE AND ENVIRONMENT

Jabugo is a village located in the Sierra de Aracena and Picos de Aroche Natural Park —Huelva, Spain—, in a totally natural and ecological environment, enjoying the best weather conditions for curing high-quality Iberian hams and shoulders. This is what makes these products be known as the ones with the highest quality in the world.

The microclimate of Jabugo is characterised by not very cold and wet winters, not very hot summers, and long and mild springs and autumns. The unique conditions of Jabugo make that hams develop slowly for long and quiet periods of curing in natural warehouses during which hams acquire intense and rich aromas as well as exquisite tastes. As a result of this, the Iberian hams and shoulders cured in this exceptional and famous Serrano village are considered as an authentic treasure of the universal gastronomy.
